BBQ spare ribs
Two racks of spare ribs
Mix together
2 T olive oil to coat ribs
1/4 c. Kosher Salt
1 /4 c. Black Pepper
1 cup brown sugar
1 T. garlic powder
1 T. Onion powder
1 T. Smoked paprika
Mix together all seasonings in a bowl
Coat ribs with Olive oil
Take seasoning mix and generously rub it on the ribs on top and bottom. You can even do it the night before so the rub marinates into the meat. Place in a baking dish and cover with foil
Place in 300 degree oven for three hours.Top with favorite BBQ sauce and put back in oven uncovered under the broiler for five minutes or until sauce is browned and caramelized.
Cowboy beans
1 large can favorite baked beans (we like Bush's maple brown sugar)
1 can dark kidney beans
1 can white kidney beans
1 T. Olive Oil
2 medium onion coursely chopped
1 green bell pepper coursely chopped
5-6 strips of cooked crisp bacon
1 cup BBQ sauce
Drain liquids off of beans and mix together in baking dish. Saute peppers and onions in olive oil until tender and starting to brown. Add to beans and mix. Stir in BBQ sauce and top with crumbled bacon. Bake at 350 degrees covered for 30 minutes then remove cover and bake for an additional 15 minutes.
